Chuck's Billion Dollar Bacon

If you are anything like me, you love bacon. But, on special occasions, plain old bacon isn’t special enough. Chuck’s Billion Dollar Bacon, now that’s something completely different and it's worth every single penny. If you can’t wait for a special occasion to try this recipe out, don’t worry I won’t tell, go ahead and enjoy every single bite.

You will need

1 pound thick cut applewood smoked bacon
⅓ cup light brown sugar
2 tablespoons Lucille’s Favorite rub
1 ounce of your favorite bourbon (or mine if you don’t mind, Four Roses)

1 cookie sheet with sides
Aluminum foil to line cookie sheet
Medium bowl
Wire whisk
Paper towels

Preheat oven to 350 degrees. Line the cookie sheet with foil and place bacon strips flat on cookie sheet be careful not to overlap. Pour the light brown sugar, Lucille’s Favorite rub, and bourbon into the medium bowl and whisk the ingredient together. Now for the fun part. Pour the mixture over the bacon and carefully coat every strip (you might have to use your hands for this.)

Place the joyously coated bacon into the oven for 30 to 40 minutes, depending on the desired crispiness. You will have to monitor it after 30 minutes to get it where you want it. Remove bacon from the oven and let it cool for at least 5 minutes. Place bacon strips on a paper towel lined plate and serve these delicious strips of love. If they aren’t worth a billion dollars I don’t know what is!
